The motor most likely has a thermal cutout. This would be a thermal relay glued onto the stator windings. If they overheat it opens stopping the motor unitl it cools down. Unless you intervene however, it will continue cycling on and off - and the motor will likely fail at some point later unless the overload condition is repaired.
If you need to shut one off, say your well pump, and there is no obvious switch, shut off its breaker or unscrew its fuse at your electrical panel.

Most water pumps on cars or pickups are strictly mechanical and do not have a kill switch. They work by means of a belt from the engine turning a wheel on the water pump which in turn pumps the water. Whenever the engine is running, if the belt is in place the water pump is going to try to pump water.

Some pressure switches have a safety in them that if the well pump pumps the well "dry", it will shutoff and you would have to manually reset the switch. Look at the pressure switch and see if there is a little rod coming out of the side of it. If there is, push the rod down until the pump comes on and hold it down until the pressure comes up enough to hold it in. Good luck! I hope this helps!

None that I have ever heard of. Your engine has a coolant temp sensor that will cause a light to come on or cause the temp Gage to register higher but it will not shut down the engine.
