Yeah, there are many. If you Google "Science Fiction Sun Burns Out" you get a ton of links. My fave is actually one where the Earth gets pulled out of the sun's orbit called "Wolfbane" by Frederik Pohl.
What this means, however, is that you should still write yours. Just because the premise has already been used, doesn't mean it can't be used again - you could have a bestseller if the characters and plot are great.

There are two stories: "The 99 Billion Names of God," and "The Mysterious Flame of Queen Loanna," by Umberto Eco. In the first, computer experts instal a computer and program at a Tibetan monastery. The program is designed to print out all the possible names of God. This was the original mission of the monastery. They set the prograqm going. Then, as the engineers are leaving the monastery, they notice that each of the stars is winking out.
In the Umberto Eco novel, the protagonist has a stroke. At the end of the novel, he seems to recover the memories that he had lost because of the stroke. But at the end, when he seems about to recover the great memory of his life, he suffers another stroke, "Why is the sun turning black?"

Yes, I remember reading a book about the sun dying about 20 years ago. If you go to the Library of Congress' website at: loc.gov and post this question with the Librarian you might get more answers than you can believe.
