It's just funny. I say Buenos Nachos sometimes, no matter where the person is from.
Anyone with a sense of humor will just laugh about it. Plus, you're saying it intentionally wrong, so you're actually making a point that you do not speak Spanish too well. You're really poking fun at yourself not the other person.
Is it politically incorrect?
Hmmm... I'd say that a sense of humor always outweighs by far any need to try to be politically correct!

Slightly cheesy, but a guy like you would have more fun doing what I do. Stand in the dairy section of your grocery store and wait for a Hispanic person to come along. When they stop near the cheese section, grab whatever they are looking at and yell,
"Nacho cheese! Nacho cheese!"
Really...try it. They will get a big kick out of it.

Well, nachos are cheesy. If you say, "Buenos Noches" then no, its fine. All of Mexico is a wonderful place, but i love Mazatlan the best.
