light is made up of tiny particles called photons. (it's actually much more complicated than that, but that description is good enough for this explanation) The back of the eye, called the retina, is made up of light-sensitive nerve cells called cones and rods, which fire when light hits them. The electrical impulses travel to the back of the brain, which interprets the impulses into a map of the outside world.

If I remember correctly then light molecules striking a surface set the electrons to 'excited' states. As the electrons calm down they release a photon with a wavelength somewhere in the electromagnetic spectrum (wave-particle duality). Multiply this activity by the number of atoms being excited by the light and you get a pretty constant stream of photons. We then detect those in the visible range with our eyes.
What I like about this is that when it is pitch dark everything loses it's colour, e.g. a leaf is only green because and when light shines on it, in the dark it is colourless (or black).

We don't see light, we see the aftermath of it's demise after it stikes our retina at the back of our eye. The light energy released exites sensors called rods & cones (just different types of sensors for different kinds of light. These rods and cones form the `pixels' or dots in our field of view, like the coloured dots on a TV screen). This causes them to fire nerve impluses along the optic nerve, into our brain. What you experience as light is really a processed form of these nerve impulses in the brain.

light is an energy beam which has a harmonic motion like a sound wave that you can see on an osciloscope. like a sound wave different noises have different frequencies and so do different colours. as light is focused on your retina by your cornea and crystalline lens it hits differnent areas of your eye depending on where it came from and thats how you can tell where something is and how big it is. by how much area of the retina it covers you can tell its shape. also in the retina are cells called rods and cones which contain chemicals. these chemicals react to different frequencies of light and can identify either red, green or blue during the day, depending which are stimulated and it what intensities the brain can decipher the colour of the light incident and together with knowing where it came from and its shape, produce a mental picture. at night colour vision isn't so good as we switch to a system of simply black and white (or purple really). thats the jist of it really.

The retina in your eye is covered with cells known as 'rods' and 'cones' which respond to different levels and wavelengths of light. The rods respond only to low-level light and are not colour sensitive, hence why everything appears black and white at night. The cones respond to high levels of light and are colour sensitive as well. The electrical signals from the rods and cones are sent to your brain where they are processed into what you see as an image.

The optic nerve sends a stimulus to the brain

The brain checks out the memory to see if there are any similar sensations that have been stored in the brain and associated with an idea (such as dog, truck, red, my thumbnail, etc.)
