Do we understand why the births of the sexes are so close to even numbers? Or are they? Do some races have an uneven amount? Does diet and disease play a role? Are things dictated by a higher spiritual entity or is there another explanation? Do we even know?

Only science is required, forget the new age hippy stuff. As you should know, sperms come in two types, male and female. Sorry about the pun. These are created in vast and equal amounts of male and female. Whichever sperm gets to the egg first determines the sex of the child.

This is near enough completely random so there is your answer.

there are actually a few more men born than women. but population is about 50-50 (tending to favor women), because women tend to live longer.
diet and disease does not play a role, biology is pretty clear on the phenemonon.
the choosing of the sexes is scientific and works on probability
males have XY chromosome and females XX. when males and female mate they each give one of there chromosomes to their offspring.
in bio we use a "punnet square", which shows you the probability, the original chromosome are put horizontally and vertically and are combined diagonally, the XX is the mother and XY is the dad.

as the square shows theres a 50% chance of getting a boy and a 50% chance of getting a girl, real life more or less works on this principle.

i guess if you are religious you can use that as an explanation. religion can explain anything since it does not depend on facts or proof. but above is the scientifically proven theory, supported by years of research and tests.

It would be better for most species to have many females for each male, since the number of females typically is the limiting factor for reproduction and also typically invest more in the offspring.

But species aren't the thing that are selected for, genes are.

It turns out that certain things are evolutionarily stable "strategies"

for genes. A 50/50 male/female ratio is one of these (for most species).

Suppose there was a species where there was a genetic strategy for the females to outnumber the males. A genetic variant that happen to make more males, could invade and reproduce more successfully, it could make more males than the usual variety. It would then spread and outnumber the previous variation until the female biased gene was all but eliminated.

The only thing that matters here is that men have one X chromosome and one Y chromosome. When sperm is made from mens somatic cells, half are X and half are Y. It's just a matter of chance, just like if you toss a coin 50 times, chances are you will get close to 50% heads and 50% tails. That's it, no higher power at play, just chance.

Unless you have some information that I don't, women out number be by about 2.4 to 1.

This is God's plan because back in the Old Testament days, and even in the New Testament men had multiple wives to populate the earth. Multiple wives should be the norm today and is in some societies. However, because of today's society polyandry would also have to be considered as well.
