due to freezing pipes?

You can turn the heat off if you "winterize" the house properly. Turn off the water main to the house, and then open all the faucets throughout the house. Open all hose bibs, and drain the water heater. Pour a little anti-freeze into the tanks and bowls of your toilets, and you should be fine.
The best situation is to simply leave the heat and the water heater on its lowest setting, and let the faucets drip just a tiny bit to keep the water in the house moving.

This depends, but yes they could.

The climate that you live in is a factor. Are the pipes insulated? Is the area where the pipes are routed insulated? What were the temps for that winter?

Some people leave the faucets on a trickle to help compensate for it freezing.

Pipes will burst if there is water in them, and they freeze. Most areas of the USA experience some freezing weather in the winter, so if there is water in the plumbing system, you will probably end up with burst pipes and / or fixtures. To prevent this, drain the system - including the fixtures AND traps.

Yes. The pipes will freeze and the water inside of them will expand. This will result in the pipes breaking.
