When you wake up, write everything that you remember about the dream down--any colors, impressions, feelings, etc. as well as the actual dream itself. The memories are the freshest when you first awaken, so this is crucial.

As far as controlling your dreams, that's much harder to do. It takes practice, and a certain mindset. Start by simply telling yourself, before you go to sleep, that you are in control of your mind, and that you have the say as to what happens. Some people use it, alsmost like a mantra (repeating that phrase or one similar repeatedly until your thoughts all focus on what your main objective is).

It is a well known fact that keeping a dream diary is the easiest and the most reliable way of remembering dreams. It is easier to, straight away, write it down (as soon as you wake up, as you do not want to forget them. Even if you cannot remember them and only bits, just write down what you can remember! meditation and intention exercises for dream work are very powerfull tools. Start with a day and dream journals and use them before sleep(day) and every time you wake( even mid nite). Forget the word controle try guide. Be warned! these are powerfull internal forces your tapping in to. You will get better results if you stay away from alcohol and any other substances. Be carefull what you ask for you just might get it.

I would suggest keeping a journal next to your bed. Some dreams I have I'll forget and than something that next day will remind me of it. The more you focus on your dreams this way the more likely you'll be more aware to control them. Do a search for lucid dreaming. Here's one site.
