Most '73 GMC's have a thermocoil style choke mechanism on the carburetor. This could be electric or not but that's your culprit. First try to open it up and clean, lube, and reset it. If this don't do the job, then the thermocoil itself is shot. You're going to have to get the identifying numbers off of the carb and go pick up another choke unit. They're not very hard to install and set. All you'll need is a pair of needle nose pliers and a screwdriver. It'll come with a step-by-step in the box.
It wouldn't hurt to run a bit of carb cleaner in the next tankfull either.

check the choke pull off the auto chokes on early Chevy's are heat sensitive it was usually a spring broken? or binding ? it will be attached to the carb.

have the coil checked.it could be getting hot and breaking down.if its the coil,take it off the engine and install it somewhere else,like the firewall,away from the heat.

what kind of air system do you have? if you have the type that opens air for your air filter when it gets hot it might not be working(sensor)the tube at the end of your air filter
