It means to "tail" or follow someone to watch where they go and what they do. Policemen will often put a body (a cop) on somebody (a potential criminal).

Same as what blake said but in sports also.. Coach would say "Put a body on him" Meaning Cover (guard) him.
also "Put a human on him" means the same thing
