The gas in the cylinder is under high pressure. The gas in the pipes to your appliances is low pressure. The regulator effects this change

Only lets the gas come out at the right pressure and speed for the lamps etc. Too much coming out would be dangerous and not enough wouldn't work. So you regulate it.

Regulates the preasure.. withe temp changes press. changes therefore you need to regulate the preasure as it leaves the tank too high of a press. whould cause the flame to burn incorrectly.
