It is to distinguish them from white pages. Years ago, someone was a good salesman and got rid of a load of yellowed paper.

Your question reminds me of one of the best salesman stories. Years ago, when roads were first being paved in the US, lines on the road were painted with black paint. There were no written standards. A paint salesman persuaded a government agency to use white paint. He had a warehouse full that no one wanted. As they say "the rest is history."

According to this About post, the choice of yellow paper was simply one of convenience. Way back in 1883, the first phonebook to contain yellow pages (at least coupled with the term "yellow pages") was all because the printer simply ran out of white paper and used yellow stock instead.

So far this is all I could find on the subject. I have some relatives who worked in the printing industry for decades and who are also printing history buffs. If they know any further details, I'll update.
