Interesting question!

Children of the Dust - Louise Lawrence.
A young adult book that is getting hard to locate (I think), but I loved it as a teen.

Life as We Knew It - Susan Beth Pfeffer.
It's very new, within the last year, and is very, very good. The moon is knocked out of orbit and it messes everything on earth up. Also geared towards teens, but many adults have enjoyed this book, too, from what I've heard.

Armeggedon's Children - Terry Brooks.
I recently listened to this on audio. I wasn't sure I would like this, and I was a newcomer to Terry Brooks, but I ended up really getting into this book!

The Stand - Stephen King.
This is list would be incomplete without this title.

I know this is only four titles right now, but I hope this helps.

The Stand by Stephen King is the only 'end of time' book I can think of. I am not a big fan of King's books but this one seemed different from his other horror novels.
A mix of spirituality, horror and hope.

There is a very recent novel you will definitely want to include:
The Road by Cormac McCarthy

It's an amazing novel, beautifully & powerfully written, with the most astounding, dark apocalyptic vision you've ever imagined.
