For the same reason you add oil to your car. It keeps the seals moist and it lubricates the compressor. However, you should never have to add oil once the system is charged. If you have a leak, it is against the law for repairmen to refill it unless the leak has been repaired. It's for the environment.

Gotta keep seals lubed and compresser.......1-3 ozs usually enough..but check your Chiltons book
