In Microsoft Outlook, you have the option of asking for a "read receipt". This will pop up in your inbox after the person on the other end reads the email. It gives time and date the email was opened. But you have to turn this option on.

If you are using outlook express it is possible with "request read receipt" function,

A message sender can configure Outlook to receive a read receipt, which is a message sent to the sender when the recipient opens the message. To request a read receipt, perform the following steps:

1. Create a new message as usual.
2. From the View menu, select Options.
3. Under "Voting and Tracking options," select the "Request a read receipt for this message" check box.
4. Click Close.

In Lotus Notes & Outlook express they have the option "notify me when msg is rec'd./read/opened" available in the options menu. But not in most of the other mail programs. Check your preferences/options tabs. Good luck!
