There's the Los Angeles National Forest for starters. They have mountains, hiking trails, campsites, and a few visitor centers. There are some particularly nice ones north of Pasadena. To the west, there are some nice campgrounds / woods / foothills in the Malibu area along highway 101.
I wouldn't particularly call them fun though. Seeing as most of California is desert, most of the forested areas are dry, hot, and only have pines and joshua trees to offer as landscape.
As for lakes,... uh, I know there are several, but Lake Balboa in Van Nuys is the only one I can think of offhand. If you are really interested in lakes, mountains, and camping, I would suggest going to http://www.laparks.org/dos.htm

Thousands of things. Go to Coldwater, Laurel, or Benedict Canyon, right off Mullholland Drive. Further west, go to Topanga or Malibu Canyon. An hour or two east, go to Angeles National Forest.

It depends on how far from the city (LA) you are willing to travel? A few nice secluded campsites & lakes towards Valencia / Santa Clarita Valley (north of LA)
