Well the simple answer is Great Britain.
However, given that so many other people have since come to Australia i would say that a greater percentage have, to some degree, a hint of Italian or Greek heritage as well.
P.S. for those who say "white Australia or not white Australia" lets be real - the notion of Australia didn't exist until 1880 when federalism was first explored. SOOO that means that the ethnic mix for the CONTINENT of Australiasia prior to European involvement was:
African, Indian, Chinese
mix all three together some 8000 years ago and you end up with the Aboriginal peoples of Australiasia....

Definitely Great Britain being a10 bob pom myself,but a lot of our ethnic heritage comes from the Italians and Greeks Melbourne has the largest Greek population outside of Greece.

if you mean the white heritage, that would be Great Britain, because they sent their prisoners there and established it as a penal colony; that was basically the start of white Australia.
if you mean the black or aboriginal heritage, that is a whole other ball game.
