All of a sudden, the fan on my AC/heat is randomly stopping then
turning itself back on. It doesn't matter what the setting is and
there doesn't seem to be any reason for it to turn on or off. Any
advice would be appreciated.

It is most likely that you have an intermittently failing blower motor or blower motor resistor. I recommend taking the car to a professional facility for an intermittent electrical evaluation. They will have to catch it in the act. The best way would be to connect a digital multimeter to the power wire for the blower motor and the ground lead to the battery and then wait for the problem to occur. If the fan turns off and there is system voltage at the blower motor power wire, then the culprit is the blower motor, provided the ground circuit is good, which should be checked next. If there is no power at the wire when the problem occurs, then the next step is to do the same thing to the power wire at the blower motor resistor.

I own a shop and think this; It sounds to me like the throttle position sensor is bad. Also check it out for any vacuum leaks and/or a sticking EGR valve. A test of the pressure on the fuel rail should confirm if its a fuel delivery problem or not. Also: The (IAC) idle air control solenoid may be gummed up & sticking, and not allowing it to go back to idle when you take your foot off the gas pedal. A bad throttle position sensor can be the culprit, as I have seen many of them bad, and not show up on the computer as a code. Remember, the gas pedal not only controls the gas, but the amount of air entering the engine as well, so if the engine dies, then it can be either not enough fuel, or air as well. Glad to help out, Good Luck!!!

could very well be just a loose wire. Most likely in the switch itself or in the blower motor. The vibration of the engine could rattle it loose and it could lose its connection, if it is not tightly secured.

easy your running low on freon. you need your ac system recharged. it cycles off and on to cool the compressor so it does'nt burn up because of low oil/freon/pressure.
