Oooh - difficult question. Technically it was Pope Urban II who preached the First Crusade at the Council of Clermont in 1095. I recommend Stephen Runciman's book on the First Crusade as a good general introduction. Jonathan Riley-Smith also has a very good (and much slimmer) book on the subject.

as for whom, well christians attacked, but apparently the muslim armies were creeping up on europe and there wouldve eventually been a conflict.
