Stains on satin matte finish headers can usually be removed by using hot soapy water or an environmentally safe Orange Cleaner Degreaser and a soft cloth. Never use abrasive cleaners. Two or three cleanings may be required depending on the severity of the stain.
Hi Luster Polished ceramic header finish can be cleaned in the same manner and can be polished with a non-abrasive aluminum polish. (Wax Shop, Mothers, Never Dull)

Well, i think just about anything you try to put on them, will get burned off....you know those things get really hot.
I don't think you really have any control over how your headers look. The fact of the matter is they get extremely hot, and whatever pretty finish a company puts on them to make them look nice is almost guaranteed to get discolored. Maybe its different with ceramics though...I have doug thorely headers with a chrome finish, they tell you right on the website, that the finish will turn blue because of the heat, and that the chrome is not meant for looks and will not stay that way. I'm guessing its a similar deal with ceramics.

try a chrome polish such as winnol or you could use 000 steel wool as a last resort on the ceramic coating.
