I would say you have a faulty gauge or sender unit.

When you changed the thermostat what was the heat range setting stamped on it some are rated to allow the engine to get hotter before the thermostat opens up, also your heat sensor that
allows your electric fan to kick on could be faulty.I also would have radiator flushed and new coolant put in at the proper level setting. If you had a head gasket leak you would notice a change in engine performance.

The first question is whether or not your gauge is reading accurately. Get a candy thermometer, and put it in the radiator tank. Then start the motor and run it until the gauge moves up to the normal range. Then check the candy thermometer. If it agrees with the dash gauge, you have a real overheating problem.
First question is whether your fan is operating correctly: if it's electric, it's possible that the fan switch is bad or the fan motor is burned out. If it's mechanical, it may be that the viscous coupling has failed.
If that's ok, then the most likely problem is a clogged radiator. Fortunately, this is a pretty cheap radiator if you need to replace it.

It sounds like a faulty thermerstat even though you chaged it,or it is very possibly an electrical problem.Maybe the cheapest way in the long run would be go to known garage and run it on a diagnostic computer(possibly cheaper in the long run) personally this is what i would do.

It could be as simple as your radiator is fouled up with road grime .Not sure how easy it is to clean but if you can spray soapy water throughthe front and the after setting five minutes spray with water ,becarefull with a pressure washer for you can smash the cooling fins .

blockage in the cooling system...preventing sufficient flow, or cooling fan not cycling, or air pocket in cooling system....When you cut car off, do you have any gergling noise?Have you checked the radiator for cold spots? when you are at redlight..do you hear the cooling fan coming on?, primary cooling fan should come on at 195 degrees, cooling fan relay could be inop, or fan bad, or the temperature sensor could be faulty-this tell the computer when to engage fans..Does your a/c work..if so secondary cooling fan engages when you turn it on..email me back with more information.

sounds like you have an electric cooling fan. when the temp is alittle high, pop the hood and watch your fan(s). if it doesnt come on within a minute or so, there is your problem. odds are your motor is still good. most often it is the temp sensor.

Try to check your cooling fan if silicon oil is still full which will affect the efficiency of the cooling system.

check to see if the cooling fan turns on when the temp reach 'H'. And make sure the coolant is topped off.You might have air pockets in the system. Or the coolant temp sensor is not plugged in.

Check your water or antifreeze for correct level of fluid.
Make sure your cooling fan('s) are working properly.
Make sure thermostat is not in backwards.
Cooling system could be vapor locked.
Replace temp. sending unit.
Possibly faulty gauge.
