For example, the Lord of the Rings. Some sets were actually built really small and out of clay and other materials. I am really into building small projects with my hands and Im thinking about putting my all into that, career wise. Any help at all would be greatly appreciated!!! Thank you!

I've been building plastic, resin, and wood models for about 35 years now, along with a number of dioramas.
A good idea for practice is to build small dioramas from historical photos... since in a CAREER, you'll be doing your work from designers sketches and drawings.
Sadly, much of this has faded out with the inexpensiveness of Computer Graphics.
