Humor: Douglas Adam's Hitchhiker's Guide to the Galaxy, the series of books. They are just fun, easy reading and hilarious.
SciFi: Dune series by Frank Hurbert. He just draws you in the this new world and culture.
Stranger in a Strange Land by Robert A. Heinlein: Just a very interesting story with some really strange concepts
Fantasy: Narnia series by C S Lewis, Quick easy reading, well developed stories.
Lord of the Rings/The Hobbit: Tolkein, well developed stories that draw you into another time and place.

I have a ton, but my favorite book I read within the last month was Kite Runner, because I never wanted it to end. I wish there were a sequal, but there isn't. All of my favorite books are the books that keep me so interested I finish it within a couple of days, this was one of those.
