What does the A & M stand for?

Agricultural and Mechanical. This comes from a piece of Civil War era federal legislation (the Morrill Act) which granted land to the states to support colleges which would include "agricultural and mechanical" topics among the subjects they taught. This meant in particular applied chemistry and engineering.
