This is how they did it :
It has to do with super-cooled solutions. You have a super-cooled solution when you cool a liquid solution below it's freezing point without it freezing.
They super-cooled the beer, then, by tapping the beer on the counter, they add energy to, and destabilize the solution, causing it to instantly freeze.

You can also super-heat a solution. This happens often when you heat pure water in a microwave. This superheated water will explode into a furious boil if you add sugar or coffee powder to it. Many people have been scalded by this phenomenon.

Freezing beer is uncool. It is very hard to drink in this form. I would not do it man.
