You can tell for a few reasons:
(1) Dreams are limited in duration. You may forget the distinctions between dreams and reality while you're dreaming, but they are immediately obvious to you again when you wake up, and that isn't too long.
(2) Dreams usually lack the vivid detail of reality (though perhaps not always, so this only works some of the time).
(3) There is continuity in reality that is often missing in dreams (ever notice that sometimes in dreams you are in places that don't exist, or gravity is backwards, or you blink and suddenly a person, place, or thing changes?).
(4) You do not have the same command of yourself in dreams as you do in reality (though you often fail to notice this until you wake up). In dreams it is as though you are watching yourself (and in fact, you sometimes see yourself in dreams doing things, rather than seeing through your own eyes). You don't feel like you have control over your actions the way you do when awake. The exception is lucid dreaming, but of course you know that you're dreaming when you're having a lucid dream, so there's no chance of your mistaking a lucid dream for reality.

you must be a matrix fan... good stuff. I know it sounds weird but in my dreams I know that I am dreaming and I tell things to happen in them. Like I will tell myself that I need to fly over a volcano and I want my cat to come along... I control the weather and the story. I make my dreams what I want... for real because I know that I have the control. I know when there is life and reality because I have no control!

Happens all the time to me, and I can tell its reality when I know a place I go in my dream doesn't exist, or I die and have another dream. Reality is now... or is it?

The definition for a dream can vary. It can also mean a wish or desire. Reality can feel like a dream because it seems surreal. Dreams, the ones that take us places in our sleep, are surreal. So I guess it all comes down to surrealism.
