my familys making corned beef on st patricks day but im a vegaterian what should i make myself?

If you want to eat something irish, you can make colcannon which is mashed potatoes with cabbage.

Colcannon is a good side dish that's vegetarian and very traditional:

3 cups finely shredded green cabbage
1 onion, finely chopped
1/4 cup water
6 cooked potatoes, mashed or 4 cups prepared instant mashed potatoes (prepared according to directions on package)
1/4 cup milk
1/4 cup butter or margarine
Salt and freshly ground pepper to taste
PREPARATION:
Place cabbage, onion, and water in a saucepan or Dutch oven and quickly bring to a boil. Reduce heat, cover, and simmer about 8 minutes until tender. Do not overcook.

Add mashed potatoes, milk, butter or margarine, salt, and pepper.

Colcannon is served warm as a side dish.

Yield: 4 to 6 servings

Potatoes. Add leek to make it authentic.
Make a soda bread.
Or bannock.
Have some Kerrygold cheese.
(Try Dubliner- it's sharp and tangy and my personal favourite!)
Corned beef and cabbage is New England Boiled Dinner.
We don't eat that in Ireland.
It's an American dish.

cabbage carrots and raisins.
i know it doesn't sound too appetizing but it is good.
just add about 3 cut up carrots to the boiling cabbage and a
small handful of raisins.
and of course there are the boiled potatos! must have the potatos!!
Irish Soda Bread too.

there should be some kind of cabbage or potatoes to go with the corned beef.
