in xbox 360 what do you do with gamescore that you get when you unlock achievements?

You don't so anything with it. It's just for bragging rights and a fun way to let people know how much you play and how good you are.

Gamerscore won't earn you anything but bragging rights. Its essentially to show who's the top dog on Xbox Live. But it is fun to compete with friends in seeing who can rack up the most Gamerscore. But if you were thinking that you could use it to buy stuff, that's incorrect, you still have to buy Microsoft Points.
