I think the answer lies in ancient Greco-Roman history. Easter customs are rooted in spring fertility festivals.
Rabbits do produce offspring rather copiously.

Easter is a pagan holiday that celebrated the spring solstice. The Easter bunny along with the eggs and other symbols were taken from the pagans by the Catholics. A lot of our holidays were/are pagan holidays that were adopted or changed by the Catholics.

Hoppin' down the bunny trail, hippity hoppity Easter's on it's way.
Like the days of the week, Easter's name is a survival from Teutonic mythology. The word "Easter" is thought to be derived from the Scandinavian word "Ostra"and Teutonic words, "Ostern" or "Eastre." Both Ostern and Eastre are mythological goddesses of spring and fertility. Their festivals were celebrated on vernal equinoxes. Easter traditions are closely related to the festival, ie., Easter rabbits and brightly colored Easter eggs. Easter rabbits are symbolic of fertility, and brightly colored Easter eggs are symbolic of spring's sunlight, as well as fertility, creation, and new life. Rabbits are known for the great capacity to produce in abundance, especially during Spring.

Christian holidays are similar to pegan holiday because christians were persecuted for thier beliefs so they celebrated on the same day as pegan holidays. Which is why on Easter you celebrate the death and resurrection of Jesus Christ and the Easter bunny.
