OMG if you haven't bussed tables, done dishes, waited on tables, been a janitor, and a hostess, been a short order cook and know how to BBQ too, along with bartending experience (whew) dont even try to open a restaurant...coming form the industry, if you open a restaurant and haven't done it all...you fail miserably, and your food stinks...some have good ideas but have no idea how to run a business like a restaurant.

I agree with Cori and I speak from experience too.
Market segmentation and selection really depends on which location you have chosen, e.g. you don't want to cater for a young crowd if you are opening up in the countryside.
Good luck if you want to go ahead with it.

go Cori go!!! Cori hit the nail on the head, unless you have worked your way up in a restaurant, than you will fail, heck the chances of not failing even if you did work your way up are so slim. Good luck!
