Because it is used to refer to all Asian people who clearly are not all from the same country. To call every Asian a "Chinaman" 1) infers that all Asians look alike which is not true,
2) denies both the physical and distinct cultural differences of the many Asian countries
3) is unnecessarily attempts points out there supossed ethnicity as though it were a function of that person
4) is just rude because they have a proper name for their ethnicity that no one has a right to nickname unless it is an explicit agreement between you (which is probably not straight off the bat).

Nowadays the term is so dated that it would probably just make people laugh, like calling a caucasian a 'honkie'. Historically it was an insulting term for Chinese men who were likely temporary laborers for railroads or other low occupations. If someone "doesn't have a Chinaman's chance" he can expect to be treated as unjustly as these guest-workers were.

Because someone decided they were offended by it. All asians do not share the same ethnic background, features or culture.
