most of the folks have given you the names of classical composers. A couple of artists ( the folks that play all that good music) that I like:
Yehudi Menuhin, who plays violin
Glenn Gould, who played piano
Pablo Casals, who played cello
James Galway, who played flute
Dennis Brain, who played French horn
Sophie Mutter, who plays clarinet
Marta Argerich, who played piano
there are a "million" others who play amazingly. Go wild, find all of them
Happy listening

There are so many that I like it's hard to choose just one. But if I have to choose one I guess it would be Beethoven. It was his sonatas that I used to fall asleep to at night sometimes when my dad used to play the record to relax himself from a hard days work.
