because they come from different languages. Goose is from Old English gos, ultimately from Latin. Mongoose comes from the Marathi name mangus. That's the way English is; its made up from a collection of a whole lot of different languages, so the rules governing spelling, pronunciation, pluralisation, etc, are confusing and conflicting.
