If these were put together by a family member, I would finish it the way it is. It is the memory not the perfection.
Many quilts were made of worn out clothing or with the fabric scraps they had on hand. So they did the best they could at the time. They did not have the luxury of the time it takes to make things perfect.
Now my Mother was a perfectionist and tried to bring the two together. So everything she made was perfect.

Not sure if you are serious, but that's what most quilts are supposed to look like (all different colours, completely mixed). That's what makes them special...
New comment:
Sorry didn't mean to sound rude. I don't know anything about quilting, I just thought that's a family tradition thing, every woman in the family adds a piece of fabric that she likes or means something to her(like from baby's clothes). I always wanted one that was all mixed with some story behind every patch.
I guess there are different ways to make them. Sorry, not an expert. I just thought you were being funny on purpose.

If these are truely antique quilt tops, assemble them as they are. You could damage the fabrics if you tried to take them apart. They can become so fragile.
They also could just be "crazy quilts". Those were pieced to be as the name says, crazy.
Just go with them and enjoy.

Don't take them apart, but view them critically. Maybe the quilt top maker left these unfinished because these weren't attractive enough to be worth the time and effort of quilting.
Why are you fnishing them? Will looking at and using these quilts later bring you pleasure? If not, don't waste your time finishing these.

I wouldn't take apart an antique, and I wouldn't finish it either. If you think they're ugly, you should sell them because some of us love the mish mash of old quilts that were made just to use up scraps or to keep from being idle. If they're not valuable, you can also cut them apart and make other things.

I would leave it as it is. It was their interpretation. Just add your own pieces to it to finish it.
Someone made over a quilt I started, and it turned me off to quilting. I got the message loud and clear that mine wasn't good enough.

My thought would be to leave it as is, anything could be a pattern. Also depending on the fabric taking it apart and reassembling it could damage the quit. Of course your decission will be the ultimate one, just be sure you are happy with it.
