I would say that EE, CE, and ChemE are at the forefront in terms of demand while Aerospace is on the decline. Civil Engineering and ME tend to enjoy longer careers at one place. However, most engineering jobs do not have a huge differences on the pay scale. The key is to find something you like because engineering programs vary greatly and it would be difficult to cross over to another area, maybe except for EE and CE.
