In the dictionary...
Gay (adj) (early meaning) - happy, carefree, brigth, showy.
Gay (adj) (present meaning) - refers to homosexual man.
Man (noun) - adult male of the human species.

The difference? Gay is a word used to address a homosexual man, while man is the person itself.

Nothing, gay is used to designate homosexuals male and female, BUT, and I don't know why, to further define homosexuals between genders, lesbian is used for females, but for some reason gay is used for male.
