Usually the total % of alcohol content. Also depending on what type of liquor you are drinking it also effects the taste. For instance "cheap" Vodka is a lot more grainy than say something like Grey Goose which has good flavor and goes down pretty smooth.... you know what they say "You get what you pay for".

all liquors do the problem is in the barrels and the process that makes the booze most have a type of oily ester alcohol from the distilling process or from the charcoal in the barrels for whiskey thats poison to the brain and organs and gin has poisons from the juniper berries used to flavor it and make that taste itsa pine bush and so the resins are poison also cognac, stored in the white oak barrels from whiskey why is thats wrong or poison because the burnt oak is filled with tars they make the smooth flavors of the whiskey and the cognac blend so its poison

The prise is obvious. However, Usually higher priced liquer almost always tastes better because of the higher quality of care in the making of said product. There is less polutants in these products therefore less hangover by volume.

The aging process . It take longer to distill like 20 year old scotch than 2 or 3 year old scotch. It is way smoother to drink, but it all rots your gut.
