King Size Homer!
There's just the right amount of craziness in it. Its silly and contrived, but still manages to be kind of realistic.
Like Futurama, its hard for me to make a real decision. So by default its King Size Homer because it just happens to be the episode I watch the most.

There are several, but if I had to pick an absolute favorite, I guess I would say the one where Ned Flanders goes crazy and checks into the nuthouse.
