Both are good eating. For squid ,there is deep sea harvesting. Crayfish are swampy land harvested. Try either one fried.

I've always caught crayfish by hand under rocks. They basically dig a shallow depression under a rock and hide there from predators. Crayfish will scavenge for food meaning dead stuff but catch fish if the fish are not alert and they probably feed on algae or similar type organisms.

What kind of squid are you talking about I've seen some on t.v. that were like 6 feet long I think the t.v. crew was in mexico or south america. Those squid were eating each other but I;m sure they catch fish. The camera guy was lucky that he had an armored suit to protect him from the squid beaks and was tied to a fishing boat since he had been pulled under a hundred feet or so by one of those large squid.

Niche is the role of the organism in the ecosystem. Think of what the organism needs and provides. Also think of what would be different without the organism in it.

Squid -

Crayfish -
