When you ask how long can a cello hold a note do you mean like in one stroke of the bow because It depends how long the cellist use his bow.
If you want to hold the note for a long time you should start from the frog of the bow and move as slow as possible to the tip. and the comment one person made about cellos can hold notes longer than volins is not true. Bows are made for the size of the insturments and strings so the insturments hold the same amount of time depending on the player.

it matters on how long the player runs the bow over the string. cello bows are shorter and heaver than other bows such as the violin but i've done a contest of how long you can hold a note and a cello beat all the violins. now the sound isn't of the greatest of quality i've noticed if you are trying to hold the note for just a really long time
