Easiest ever:
Green Pistachio Parfait (looks great and green for St. Patrick's day)
one sm. box Jello Instant pudding - pistachio flavored
1 - 16oz container of Cool Whip or similar frozen whipped topping, slightly thawed
1 - 16oz can of crushed pineapple
1 - 16oz pkg of miniature marshmallows
Combine the pudding mix (dry) with the pineapple (juice and all). Fold in the whipped topping and marshmallows. It's gorgeous, and light and fluffy! Put it in a pretty bowl, and voila.

Irish stew is super easy and very common on St. Paddy's day. Here's my favorite recipe. I'd double the amounts for a pot luck though.
Glens of Antrim Irish Stew
Ingredients
1 ounce/25 g butter
2 pounds/900 g lamb or beef, cubed
1 large onion, coarsely chopped
2 carrots, chopped
1 Tbsp plain flour (optional)
1/2 pint/275 ml beef stock
2 Tbsp tomato puree
1/2 Tbsp sugar
2 potatoes, cubed (optional)
1 bottle of Guinness or a large glass of red wine
1 bouquet garni (sprig of parsley, sprig of thyme, 1 bay leaf tied up in muslin)
Salt and freshly ground black pepper
Tabasco sauce
Instructions
Melt the butter in a large pan and fry the meat in it until browned on all sides. Do not crowd the pan; brown the meat in two or three batches if necessary. Remove the meat from the pan, add the onion and carrots and cook until slightly softened.
Return the meat to the pan, add the flour, if using, then stir in the stock, tomato puree and sugar. Bring to the boil and then reduce the heat to a simmer. Add the potatoes, if using, the Guinness or the wine, the bouquet garni and salt and pepper to taste.
Cook over a low heat for about 1 to 1 1/2 hours or until the meat is tender. While the stew is simmering, add 4 or 5 drops of tabasco to taste.
Yield: 4 servings

CHICKEN ALFREDO!!! IT IS SOO YUMMY!!
From: Campbell's Kitchen
Prep/Cook Time: 20 minutes
Serves: 4
Ingredients:
1/2 pkg. linguine (8 oz.)*
1 cup fresh OR frozen broccoli flowerets
2 tbsp. butter
1 lb. skinless, boneless chicken breasts, cut into cubes
1 can (10 3/4 oz.) Campbell's® Condensed Cream of Mushroom Soup OR Campbell's® Condensed 98% Fat Free Cream of Mushroom Soup
1/2 cup milk
1/2 cup grated Parmesan cheese
1/4 tsp. ground black pepper
Directions:
COOK linguine according to pkg. directions. Add broccoli for last 4 min. of cooking time. Drain.
HEAT butter in skillet. Cook chicken until browned, stirring often.
ADD soup, milk, cheese, black pepper and linguine mixture and heat through. Serve with additional Parmesan cheese.
TIP: *Or substitute spaghetti for linguine.
Serve with a mixed green salad topped with grape tomatoes and balsamic vinaigrette. For dessert serve pear halves.

But if I were you, I would buy precooked meatballs in the freezer section, dump on some bbq sauce (I use sweet baby ray's honey bbq sauce) and heat! Good to go!
