temperature increases enzyme activity, breaks down pectin and cellulose in apple skin and cell walls, releasing juice, therefore more juice released when incubated at higher temperatures (eg if test tube of apple pulp plus enzyme solution put in a water bath set at different temperatures, you can then leave it in the bath for say 30 mins, take it out and pour the pulp through a filter, and see how much juice is produced in a certain time. amount will increase with temperature up to about 45 degrees C, after which enzymes will denature)
as apple gets older the cell walls break down, and so like with temperature, more juice produced.
you could draw diagram of cellulose cell wall with pectin etc.
