You can grow spider plants in a cup of water with a tiny bit of fertilizer. Just remember to let the water sit out for a day before adding it to the spider plant's mug. The chlorine in fresh tap water tends to slow down their growth. You can also grow 'devil's ivy' in a mug of water. I'll bet there are tons of others, but those are the only two I know.

Philodendron (the variegated type) is a very easy and pretty plant. I'm sure you've seen it. From the experience I've had, it's hard to kill and if anybody could do it, I could.
