I want to learn about which lands are federal and private. I would like to know how much land is owned by huge farming companies etc.

No such thing exists. First, such a map would need to be rather large to show the data, since (in dense areas), there can be a dozen owners in a single acre!

Second, the data on ownership is so distributed that it would be very hard to collect the ownership records from every county/city in the country.

Third, property changes hands frequently.

However, if you're simply looking for private vs. public lands, you might be able to find something that gives a basic notion, especially if you limit yourself to specific geographic areas.

You might want to check with your state's department of natural resources or environment. These departments often have maps of the state, including whether the land is private or public. At the national level, the Department of the Interior has such maps.

In the end, I can guarantee that any maps you have will be spotty, incomplete, and somewhat inaccurate.

Wow, you are really undertaking a project. The best way to get that information is from the United States Department of Agriculture. They should have that information. If they discourage you, try the Interstate Commerce Commission.
You should be able to get the text, I don't know about a map.
With the Homeland Security in place, you could be screened before any of this information is given to you.
