Right now, they don't mean anything; they are just part of the name of the university. However, years ago, Congress passed a law--I think it was during the Civil War--by which it would grant free land to states to establish Agricultural & Mechanical schools--that was the original Texas A & M (after the war, of course). Many universities today were originally "land grant" schools. And that's one reason they call Texas A & M students "aggies."
