My advise is to find a genuine Goan run family hotel to help support genuine local Goans. Most are easily reconisable not just by their friendly personalities but by their names. Most have portugese names still.

Try to avoid chain hotels and even other Indian's which have tried to muscle in on the local Goans business during the tourist boom. Not all the indians are genuine Goans there and part of your trip should at least be to meet genuine locals anyway.
