They just want to hear that you are stable, have good judgement, and aren't ruled by emotion. Just keep your audience in mind. They want to know you can run a business, and you are mature enough to handle the situations you might get into. Are you writing to the liscensing people or to get a business loan? If its the liscensing people id concentrate more on the care and communication aspect of it, if its for a loan talk a little bit more about financials.
