Evaporation occurs when a liquid becomes a gas. An example: water to water vapor.
In winter or summer, when you get out of the swimming pool or shower, you usually get cold right away. This is because the water is evaporating into water vapor off of your body. It takes heat with it when it evaporates, called latent heat. Thats why you get cold.
Water also evaporates from bodies of water on the ground. The water vapor from this usually forms the clouds you see.
