Nothing. Or more accurately, it may mean that she was nervous..or that her ear itched...or that she didn't want to lose her earring...or that she was bored...or that she was hiding the hickey her boyfriend gave her last night...or....
Nervous tics like the one you describe are comfort cues - scratching, touching, blinking, etc. They don't really mean anything except that the person has a nervous habit and this is how they calm themselves.

I am pretty sure this means either she was lying, or that she was slightly nervous. This kind of action is normally associated with someone uncomfortable or nervous. Perhaps she does not give interviews that often.
Or possibly she just had an itchy ear, but I would go with her being nervous.
Good luck with the job by the way!

It is a tell, If her ear is not infected it would indicate , she's lying. She's most likely got someone in line for that spot and is just going through the motions.
Don't look forward to that job! If she intended on hiring you it would mean that she got you too cheap, but in some way she's being deceptive

Wow, I'm going to have to go with Three Rivers on that one. Yes, there is a science to body language cues, you're right.

Touching your face or ears can be a way of comforting yourself so she may have been nervous herself. Either that or her ear was itching.

touching the ear is because blood capillaries in her ears contracted because she heard somthing that she dident want to hear, did you say anything that dident appeal to her?
