cable transmission:
the shift lever is connected to a cable. when you pull down it moves in a direction. this is old technology. the cable has a tendency to stretch after a while and you might have either a lot of play in the selector or might go into the wrong gear.

hydraulic transmission:
the shifting is controlled by hydraulic fluid, oil. it kind of like a pump. when you pull down on the selector, it pushes the pump so far, making the gear selection. this is more accurate and the play in the selector does not change over time.

same thing with the parking brake. used to be cable, now most are hydraulic.
