A park a day is a good rule. You won't see everything, but you'll be able to get a flavor of each park.
You can use the ticket at only one park per day, unless you pay for the Park Hopper add-on.
You can use your "day" at any of the 4 parks, so there is no such thing as a "Magic Kingdom only" ticket (for example).
If you can't see all 4 parks, here's my suggestion:
The Magic Kingdom is the original. That makes it the best (of course!) and is a definite must if you've never been. You can't say you've been to WDW unless you've been at the MK.
EPCOT doesn't appeal much to little kids, with a few specific exceptions. It's mostly "edutainment," thrill rides, and pavillions from other countries. Nice for the teens and adults, but may leave kids a little bored.
MGM is fun and there's something for everyone. It's not my personal favorite, but I see it's wide appeal. Who doesn't like the movies?
Animal Kingdom is great for kids or anyone that likes animals. It's the best zoo you've ever been to. However, if you don't like animals, it can be a turn-off.

You need to order Park Hopper tickets if you want to be able to go to more than one park in the same day. All Disney tickets are good in any park, but if your tickets are not Park Hoppers than you can only go to one park per day. You used to have to get your hand stamped if you left that one park so that you can get back in.
Park Hopper tickets are definitely the best bet. That way you can spend part of the day in one park and then have dinner in another park.
My wife and I tried to go to more than two parks in one day, but that is exhausting. You spend too much time running around and not enough time in the parks.
You should also make reservations for the restaurants that you want to eat in. They fill up and with a reservation you get in fast.
You have to take your Children to Magic Kingdom. But there is no reason to only pick two parks. You should go to two parks per day. The Mono-rail and the buses will take you from park to park and they are all free.
Epcot has wonderful restaurants and many fun things for your children.
Magic Kingdom is the number 1 spot for children.
Animal Kingdom is great for the entire family.
MGM Studios has many things that children will enjoy.

I don't know it's been awhile since I was there, but my daughter, who's 20, and has been there 3xs with us, 1x on senior trip and once with friends STILL suggests we go back...and we're thinking about it. You can buy your tickets from any Disney Store, too, if you have any in the area. I bought them before we left from the Disney Store in our local mall.
It is a MAGICAL place, though. You'll have a great time!
I don't know how old your children are, or if finances are an issue...but the first couple of times we took ours they were young, under 10, and we saved money on souvenirs by taking them out of the park to nearby dollar stores, gift shops, etc. where the items are very cheap (tshirts, toys..) for small children and they don't know the difference!
Now that they're older and know what we did, we still have a good laugh about it, and they tell the story to ANYONE who will listen!
One thing we DID get from the park that they cherish is an autograph book and pen for the characters to sign. We took the same one every time we went, and it was a "big deal" to them to spot the characters and get them to sign their book. So, if you can, get each of your children one when you first get in the park, they'll have a blast with it every time they're in the park, and it lasts a lifetime...(my 20 year old took her original book last year and got "updated" signatures!
I'm feeling some envy just thinking about YOUR trip!

Disneyworld has a lot of kingdoms(sights) that Disneyland would not, like the Epcot countries, Animal Kingdom, MGM Studios, and so that's way higher (positioned in Florida vs. California). once you're making plans a holiday, Disneyland will always be disappointing after seeing Disneyworld, yet earlier I went to the international, I always loved Disneyland and there is a lot to work out and do for days that makes the vacation basically as relaxing.

You get a "park hopper" pass. This allows you to "hop" between parks. This way you can get your fill of the Animal Kingdom, which typically closes early, and then go to the other parks.
Have fun! I love WDW but Disneyland is better because it is the original!
Don't miss Epcot! We went through all the "countries" and got different deserts and split them. This was a fun way to sample lots of things but we were still really stuffed. Don't miss the "Illuminations" fireworks! The fireworks at the Magic Kingdom are always great. There is a restaurant inside the castle that is good.
BTW, if you have been to Disneyland - FORGET YOU HAVE EVER BEEN THERE! DL & WDW are very different. When we first went my husband was disappointed with WDW becasue it was so different. WDW is HUGE.

If you get the magic your way or hopper passes they are good for all the parks for the number of days you buy. The magic your way is one park per day and the hopper you can go to as many parks as you want in one day. Or you can just buy passes at the gate for the parks you want to go to.

I think Islands of Adventure is a much better park. It's cheaper, and the lines are shorter. I worked at Busch Gardens Tampa, and I don't recommend taking a two year old, they will not remember, and I guarantee the toddler will get irritable and generally make the rest miserable. I saw it everyday.

For whatparks I would suggest for more like thrill rides MGM, Magic Kingdom is the one with the most rides. I would say one of those Epcot doesnt have many rides. Magic Kingdom has the most disney feeling though cuz it has all the character and movie themed rides. MGM has the thrill rides, like Rock-n-rollercoaster and the tower of terror.

not sure about now but USE to have to get a pass for each park
and SAVE SOME MONEY it is high there.............and the food is SOOO GOOD long lines but they move pretty quick . it is so clean there as well. I hope you like it I am 52 and it is my favorite place,, and while in Fla area not far from there they have the glass bottom boat where all the tarzan movies were made, Pretty cool too.
